Rhubarb Crumble

Ingredients

365g diced rhubarb

200g caster sugar

3 tablespoons plain flour

200g light brown soft sugar

80g oats

200g plain flour

225g butter

Method

1 Preheat oven to 190 C / Gas mark 5. Lightly grease a 22 x 33cm (9 x 13 in) baking dish.

2 In a large mixing bowl combine rhubarb, caster sugar and 3 tablespoons flour. Stir well and spread evenly into baking dish. Set aside.

3 In a large mixing bowl combine brown sugar, oats and 200g flour. Stir well then rub in butter or margarine until mixture is crumbly. Sprinkle mixture over rhubarb layer.

4 Bake in preheated oven for 40 minutes. Serve hot or cold. Ideal with cream or custard.
